Ingredients
125g butter, softened
180g caster sugar
220g self raising flour, sifted
1tsp vanilla essence
3 eggs
125ml lime juice
zest of 1 lime
100g unsalted pistachio, roasted and finely chopped
Method
1. Preheat oven to 170°C.
2. Cream butter and sugar.
3. Add in vanilla essence and eggs.
4. Fold in flour, lime juice, zests and lastly the chopped pistachio.
5. Bake for 30-35 mins in 170°C oven.
